Parmesan, pienza percorino and Fabbri Amarena mousse

150ml fresh cream 

50g Parmesan cheese 

50g medium matured Pienza Pecorino cheese 

2 medium size potatoes 

Fabbri Amarenas with juice 

Seed oil, salt and pepper and required

Whip the cream until stiff, and then gently stir in the grated cheeses and season with pepper. Divide the mixture into individual shot glasses and leave in the refrigerator until it’s time to serve. Before serving, place the amarenas on top and drizzle with amarena juice. Serve with thinly sliced potato chips fried in seed oil and slices of toast.
