Orange Pastry Pie with Custard and Amarenas

For the pastry

400 g flour 

200 g sugar

200 g butter

1 whole egg

2 egg yolks

1 sachet of baking powder (16g)

1 organic orange 

Fabbri amarenas icing sugar 

For the custard

1/2 liter milk

3 spoonfuls of sugar 

3 spoonfuls of sifted flour 

3 egg yolks 

1 organic lemon

Make the custard: Beat the egg yolks and sugar together until the mixture is pale and foamy. Gradually whisk in the flour. Pour in the milk, stirring gently all the time. Pour the mixture into a pan and bring to the boil on a medium heat. Once the custard has come to the boil, keep it on the heat for another 5 minutes. Mix the flour, sugar and softened butter with your hands on a worktop. Add the baking powder, 1 whole egg, 2 egg yolks, and the grated rind of 1 orange and knead until the dough is smooth. Divide the dough into 2 balls, one bigger than the other. Roll out the bigger ball of pastry onto a round baking tin covered with baking paper. Make the edges high. Pour in the custard and add the amarenas. Roll out the smaller ball of pastry and place it over the custard. You can use little pieces of pastry rather than one big piece. When the pie is ready, bake in a pre-heated oven at 170°C for 25 – 30 minutes, until golden. Dust with plenty of icing sugar.
