Melt the butter in a pan with the milk on a very low heat. Melt the chocolate using a bain-marie, in another pan. In the meantime, beat the egg yolks with the sugar until the mixture is pale and foamy. Add the cold melted butter and then the flour, and stir. Add the baking powder and potato starch, and then the butterscotch flavoring. Beat the egg whites until stiff with a pinch of salt and fold them into the mixture. Then add the melted chocolate. Pour the mixture into 3 or 4 cupcake cases and place an amarena in the middle of each one (it will sink down into the mixture during cooking). Bake in a pre-heated oven at 180°C for 25 minutes. When the cupcakes are ready, take them out of the oven and put a drop of Fabbri Fruits of the Forest Top on each one, followed by an amarena in syrup. You can serve them while they’re still slightly warm!!
