Bring 1 liter of milk to the boil together with the vanilla. In the meantime, beat the egg whites of 5 eggs until stiff with 20g of sugar. Make the egg white into quenelle shapes and poach them in the milk for 1 minute each side (until you have finished the egg white). Beat the egg yolks in a bowl with 130g sugar until the mixture is pale and foamy. Add the corn starch and 50dl milk. Bring to the boil and stir, and then put back on the heat until the custard starts to thicken. Pour the custard onto a plate, and place 2 egg white clouds on top. Add Fabbri Amarenas and enjoy!
