Coconut and Amarena Ring-Shaped Cake

3 eggs

120 gr sugar 

100 gr of coconut flour 

1 glass of corn seems oil

250 gr flour 00 

1 baking powder

100 gr of Fabbri Amarenas

Use a whisk to beat the eggs and sugar together until they form a light, frothy mixture.  Blend in the coconut flour, oil and finally the flour, sifted together with the baking powder. Blend well and pour the mixture into a ring-shaped cake tin or mold, making sure it is level. Put some amarenas on the top and push them gently into the mixture.  Bake in a pre-heated oven at 180°C for 40 minutes (check if the cake is ready by seeing if a toothpick comes out clean), leave to cool and remove from the cake tin.  Use a toothpick to make small holes in the surface and drizzle some amarena syrup over the top of the cake.
