Amarena Fabbri pancakes

Ingredients

For the pancakes 

  • 100 g rice flour 
  • 1 egg 
  • 40 g egg whites 
  • 2 tablespoons of Greek yoghurt 
  • 1¼ cups of milk 
  • a handful of Amarena Fabbri 

 
For the mousse 

  • Fresh ricotta as required 
  • Extra-dark chocolate (melted in a bain-marie) 

Preparation

Start by draining the Amarena Fabbri cherries, keeping their liquid to one side, and chop them with a knife; 

Combine the eggs, yoghurt, the Amarena Fabbri cherries and two tablespoons of their liquid, and the milk in a bowl, then whisk vigorously; 
 
Now add the sifted flour and mix all the ingredients together until the mixture is smooth and creamy; 
 
In the meantime, heat a non-stick frying pan and pour in the mixture a little at a time; 
 
Cook the pancakes for 2 minutes on each side and garnish with ricotta and extra-dark chocolate.
