Heat the egg whites to 45°C together with the sugar, whilst stirring with a whisk. When the mixture has reached the correct temperature, pour it into a bowl and beat the egg whites until they form stiff peaks, using an electric whisk. Add the flour, sifted together with the cream of tartar and a pinch of salt, and blend in gently using a spatula, stirring from the bottom towards the top. Add the grated orange rind, mix again and then stir in the liquor. Pour the mixture into a silicone muffin tin, and bake in a pre-heated oven at 170°C for about 15 – 20 minutes. Turn out the muffins and leave to cool on a baking rack. When they have cooled, dust them with icing sugar. Do you want to add a personal touch? I added a colorful, delicious ingredient which made them even more special… Fabbri Amarenas! Try them… they are mouth-wateringly good!
