Amarena Pancakes by Chiara

3 eggs 

65 g sugar 

1 spoonful of maple syrup 

120 ml water 

165 g flour 

1 teaspoon of baking powder

Beat the eggs together with the sugar.  Add the water and the maple syrup. Slowly sieve in the flour and baking powder. Mix well with a whisk and leave to rest for at least 20 minutes. Heat a frying pan and grease with a tiny amount of oil, removing the excess with a paper towel. Pour a little of the mixture into the pan using a ladle and wait until the surface of the pancake is full of bubbles.  Then turn it over and cook until it is a light golden color.  Repeat the procedure until you have finished the batter, cleaning the frying pan every now and again with a lightly greased piece of paper towel.  While you are preparing the pancakes, put the ones that you have already cooked on a baking tray in the oven to keep warm (the oven should be pre-heated and then turned off).

You can serve the pancakes in various ways. Create a stack of pancakes or fold each one in half.  Either way, take the ricotta (or gelato if you prefer) and add sugar or honey to taste.  Mix to form a smooth cream and then spread on the pancakes.  Pour a little Amarena juice on top, and add some Amarenas cut in half. Then layer another pancake on top, or fold the pancake in half and serve.
