Bring the milk to the boil with the sugar, rice, a pinch of salt and the vanilla essence. Cook until the rice has absorbed all the milk and then leave to cool. Roll out the mixture into a rectangular shape (about 0.5cm thick) on a piece of plastic wrap. Put a strip of chopped pistachios along the center, place the amarenas on top, with 0.5 cm between each one, and roll up the mixture, using the plastic wrap to help you. Put in the refrigerator to cool. After one hour, remove the dessert from the refrigerator and roll it in poppy seeds. Cut into slices and serve.
