Preparing this dessert is a snap!!
Cut out squares with 4 cm sides (it’s easier if the puff pastry is already in a rectangular shape, that way you don’t have to piece together squares from leftover strips). Place a puff pastry square on each paper liner with the corners extending over the sides, place in each square a generous spoonful of pastry cream (I use my own regular recipe) and place 1-2 amarena cherries with a little bit of their syrup on top. Fold over two opposite corners until they meet and then the other two, brush with the amaretto liqueur in which you previously dissolved the vanilla sugar. Sprinkle with the chopped hazelnuts, place the surprises on a cookie sheet and bake in a 180°C/355°F convection oven on the middle rack for about quarter of an hour or until they are golden!
My official taster burned herself because she could not wait to try them!
It’s better to let them cool and serve them with a fragrant hot tea or a liqueur like homemade Laurino.
