Do vyou feel like a snack? What about a delicious, easy-to-make muffin? The recipe comes from here, but I’ve made a few changes. I have left out the frosting and the strawberries, and used Fabbri Amarenas instead, which are a real treat for the taste buds. I creamed the softened butter together with the caster sugar, and then added one whole egg at a time, and some of the milk. Then I sifted in the flour (I used gluten-free flour) together with the bicarbonate of soda, and continued mixing, adding alternate servings of flour and milk. Gluten-free flour tends to make the dough quite dry, so I added another 60/70ml milk, but you don’t need to add the extra milk if you use regular flour. Lastly I added the baking powder, a few drops of vanilla flavoring or the seeds of a vanilla pod, and the gluten-free white chocolate shavings. I put the muffin cases in a silicone muffin tin, and filled them ¾ full with the mixture. Then I put a couple of Fabbri Amarenas in syrup (the muffins are quite small) into each one and then covered the Amarenas with the rest of the mixture. I baked the muffins in a pre-heated oven at 180°C for 35 – 40 minutes. I left them to cool and removed the muffin cases before drizzling them with Fabbri Amarena Top (all the Fabbri products I used are gluten free) and then tasted them – they’re delicious!!
