Clean a dozen prawns and leave the tails on but completely clean the rest of them. Put the shells in a liter of boiling water to make fish stock. Remove the shells and pour in the polenta flour. Cook for 40 minutes. Cook the 12 prawns in a pan with a knob of butter and half a dozen Fabbri amarenas. Break up the other prawns and stir them into the polenta. Serve the polenta put the prawns and amarenas on top.
