“Pan di Stelle” (Star Biscuit) Cake

Ingredients

1 large packet of Pan di Stelle biscuits

1 bowl of lukewarm milk 

1 jar of hazelnut cream (400 g)

500g whipping cream

Icing sugar, as required

Fabbri Amarenas as required

Unsweetened cocoa powder

Less than 20 minutes

Method

Get all the ingredients ready on your worktop and you’re half way there :o)

Whip the cream until stiff with a little bit of icing sugar (it depends how sweet you like it).Heat a bowl of milk until it is lukewarm, add a bit of sugar and dip the Pan di Stelle biscuits in it. Leave them for a few seconds and then make the first layer of biscuits on the base of the springform cake tin. After the first layer (fill in all the gaps with broken biscuits), pour a generous serving of hazelnut cream into the tin and spread it evenly over the biscuits (heat it up for a few seconds in the microwave or with a bain-marie to give it a more liquid consistency). Then add a layer of whipped cream, dotted with Fabbri Amarenas.Then dunk some more Pan di Stelle biscuits in the milk, add another layer and some more hazelnut cream, cream and Amarenas. Add a third layer and leave to cool in the refrigerator for a few hours.Before serving dust the top with unsweetened cocoa powder, add some Pan di Stelle biscuits as decoration and some Amarenas, as you wish. Run a long knife around the edge of the cake and then open the cake tin.Serve and...enjoy!

This is a really easy cake which takes 5 minutes to prepare, and both children and adults will love it!
