Mix all the dry ingredients in a bowl (flour, baking powder, desiccated coconut, grated lemon rind). In another bowl, mix all the liquid ingredients together (puréed pumpkin/squash, melted butter, eggs and milk). (First bake the pumpkin/squash in the oven at 200°C for 20 minutes, and then purée it using a hand-held blender). Add the dry ingredients to the liquid ingredients and stir well to avoid lumps (use a hand-held blender if necessary). Put the mixture into muffin cases in a muffin tin and put an amarena in the center of each one. Bake the muffins in a pre-heated oven at 180C° for 20- 30 minutes. When they have cooled, decorate with swirls of whipped cream and a few amarenas in the center.
