Little Goat’s Cheese and Rocket Truffles with an Amarena Surprise

Ingredients

300 g fresh Caprino goat’s cheese

50 g fresh rocket

Ground black pepper

Salt

About 10 Fabbri Amarenas

20 - 60 minutes

Method

Chop the rocket finely with a knife. Add plenty of ground black pepper to the rocket. Cut the amarenas in half and put them to one side. Add a little salt to the rocket. With slightly wet hands, take a small amount of goat’s cheese, push half an amarena into the middle and close the cheese around the amarena to form a little ball. Roll the truffle in the rocket and then on a clean surface, to ensure that the rocket sticks to the truffle well.  Repeat the process until all the ingredients are finished – you should make about twenty little truffles.
