Cornflake and Amarena Biscuits

Ingredients

2 whole eggs 

150g sugar

150g melted butter

280g flour

grated rind of 1 lemon 

1 sachet of baking powder

(16g) a pinch of salt 

icing sugar 

cornflakes

Time

Less than 20 minutes

Method

Mix the egg, salt, sugar and grated lemon rind together.  Add the melted butter, followed by the flour and baking powder. As soon as the dough is ready, put the cornflakes on a plate and dip a spoonful of dough in the cornflakes. Repeat the procedure until the dough is finished. Put the biscuits on a baking tray covered with baking paper. Push the amarenas into the biscuits, and add a bit of liquid as well.  Bake in a pre-heated oven for 15minutes at 180°C. Dust with icing sugar before serving.
