Chop the chicken breast into bite size pieces. Thinly slice the onions. Add a few tablespoons of oil to a non-stick pan, I used Ballarini’s Greenline, slowly saut» the onions, add a pinch of salt, a teaspoon of sugar and a couple of tablespoons of balsamic vinegar, cook until soft. Add the chicken and cook for a few minutes, adjust the seasoning to your taste. In the meantime, chop the Amarena cherries and add them before turning off the heat, sprinkle with the fresh oregano and thyme. Serve immediately while hot.
