Angel cake muffins

Ingredients

50 g egg whites (from about 2 small eggs)

48 g sugar

25 g flour 

1 g cream of tartar

1 pinch of salt

1 pinch of grated orange rind

½ teaspoon liquor

20 - 60 mimnutes

Method

Heat the egg whites to 45°C together with the sugar, whilst stirring with a whisk.  When the mixture has reached the correct temperature, pour it into a bowl and beat the egg whites until they form stiff peaks, using an electric whisk. Add the flour, sifted together with the cream of tartar and a pinch of salt, and blend in gently using a spatula, stirring from the bottom towards the top. Add the grated orange rind, mix again and then stir in the liquor. Pour the mixture into a silicone muffin tin, and bake in a pre-heated oven at 170°C for about 15 – 20 minutes. Turn out the muffins and leave to cool on a baking rack.  When they have cooled, dust them with icing sugar. Do you want to add a personal touch?
