Amarena delights

Ingredients

150 g flour

100 g semolina

200 g sugar 

100 g sunflower oil 

100 g water

30 g Amaretto liqueur (or rum)

50 g peeled almonds 

50 g unsweetened cocoa powder

3 large eggs

1 sachet of vanillin

1 sachet of baking powder

For the frosting

250 g mascarpone

125 g liquid cream

A few drops of Amarena syrup

70 g vanilla-flavored icing sugar

Fabbri Amarenas in syrup, as required

Method

Make the frosting by blending all the ingredients (except the Amarenas) together in the food processor for a couple of minutes, to make a smooth creamy mixture.  Leave in the refrigerator for an hour. Blend the eggs, oil, water and Amaretto liqueur in the food processor at medium speed until lots of air bubbles start to form in the mixture.  Add the baking powder, vanillin, almonds and unsweetened cocoa powder. Blend at maximum speed until the mixture is smooth. Gradually add the sugar, beating the mixture at medium speed, and then the flour and semolina until the mixture is smooth and frothy. Put cupcake cases into a muffin tin and fill them half way with the mixture. Bake in a pre-heated oven for 15 minutes at 180°C (or until a toothpick comes out clean). Leave to cool and remove the cupcake cases. Decorate with the frosting and an Amarena on top of each one.
